Sotanghon with Sausage

Ingredients:

  • 200g sotanghon (vermicelli noodles)
  • 1 pound pork sausage
  • 1 medium onion, chopped
  • 1 cup celery, sliced
  • 4 ½ cups water
  • 1 cup uncooked long grain rice
  • 2-3 tsp toasted garlic
  • 2-3 eggs, beaten (optional)

Instructions:

  1. Soak sotanghon in hot water for 5 minutes. Drain immediately and set aside.
  2. In a large skillet, cook sausage, onion, and celery over medium heat until the sausage is fully cooked. Drain excess oil. Remove the mixture with a slotted spoon and set aside.
  3. In the same skillet, combine water, rice, and soup mix. Bring to a boil.
  4. Reduce heat, cover, and let it simmer for 12-15 minutes, or until the rice is tender.
  5. Add the sotanghon and the cooked sausage mixture. Stir well.
  6. Top with toasted garlic and beaten eggs (optional) before serving.
