Ingredients
4 kilos beef innards (laman loob ng baka)
¼ cup cooking oil
¼ cup ground ginger
¼ cup chopped onion
¼ cup garlic
¼ kilo ground beef
2 kilos beef meat
1 cup soy sauce
2 cups fish sauce (patis)
20 liters water
2 (11 grams) beef cubes
10 pieces minced ground chilli
Optional: siling labuyo (bird’s eye chilli), calamansi

Procedure
1. Wash and clean innards thoroughly. Bring to a boil then discard the liquid. Repeat procedure twice or until the innards smell fresh.
2. In a casserole, heat oil and sauté ginger, onions, and garlic. Add ground beef, beef meat, and the boiled innards. Cook until the meat turns golden brown.
3. Season with soy sauce and fish sauce. Add water and the beef cubes. Bring to a boil then simmer until all the meat is tender. Add chilli.
4. When serving, slice off the innards and beef from the pot and place on a chopping board. Slice into small pieces and the beef then transfer to an individual bowls. Ladle some of the broth. Serve with calamansi, more siling labuyo and rice.
